Crock Pot Adobo Chicken

The great thing about this Philippino recipe is that you can cater to your personal taste so easily.  Add more soy sauce to make it sweeter. Add more vinegar to make it tangy.  I suggest using white vinegar for a better smell while cooking, but cider vinegar will do.Crock Pot Adobo Chicken

  • 3 lbs chicken breasts
  • 1 small sweet onion, sliced
  • 3 cloves garlic chopped or 3 tsp minced garlic
  • 3/4 cup low sodium soy sauce
  • 1/2 cup white vinegar
  • 1/4 tsp ground peppercorns
  • 1/4 tsp salt
  • 2 bay leaves

Place chicken in slow cooker.  Mix all other ingredients together in separate bowl and pour over chicken.  If you are good at planning ahead, do this the night before and let the chicken marinate overnight.  Cook on LOW 6-8 hours.  Be sure to remove bay leaves before serving.  Serve with white rice and a vegetable.
