Crock Pot Italian Tomato Chicken

This is a whole meal best served with a vegetable.  It’s rich and full, and your kids will love it.  Add some garlic bread and you’re ready to go.  When I feel especially industrious, I serve this with broccoli rabe.Crock Pot Italian Tomato Chicken

1 26 oz. can of spaghetti sauce
1 can crushed tomatoes
1 cup chopped mushroom, white, button or portobella
1 lb. boneless, skinless cubed chicken breast
1 8oz. bag of mozarella cheese
6 peeled red skin potatoes, cubed
1/2 diced onion
1/2 cup chicken broth
1 Tbsp fresh chopped basil
1 cup shaved parmesan cheese

Combine all ingredients except mozarella and parmesan in crock pot and stir to mix.  Cook on LOW 6-8 hours or HIGH 4-5 hours.  1/2 hour before serving, add 1/2 of the mozarella and stir.  Top with remaining mozarella and parmesan to serve.
