Crock Pot Tomato/Vegetable Sauce

This couldn’t be any easier to make.  A nice change of pace from traditional spaghetti with a vegetable built right in.  I’ve tried lots of tomato based sauces and this is a definite winner.Crock Pot Tomato/Vegetable Sauce

  • 1 to 1 1/2 lbs chicken breasts or tenders, cubed
  • 1 medium onion, coarsely chopped
  • 1 medium (or 2 small) zucchini, quartered and sliced 1/2-inch thick
  • 1 green bell pepper, coarsely chopped
  • 2 to 3 cloves garlic, chopped or thinly sliced or 2 tsp minced garlic
  • 1 can (28oz) crushed tomatoes
  • 1 can (15oz) diced tomatoes
  • 1 package country gravy mix (or chicken gravy mix)
  • 1/2 teaspoon basil
  • 1 teaspoon oregano

Here’s the easy part.  Mix all ingredients together in the crockpot.  Cook on LOW 6-7 hours, until chicken is done.  Serve over your favorite pasta or use as a sauce for your lasagna.  Add garlic bread and you’re done!
